Grilled Eggplant Panini
Here, try this Grilled Eggplant Panini Recipe on for size & quickly before anyone else finds out that you’ve never shared in this dish before.
Ingredients:
2 tablespoons reduced-fat mayonnaise
2 tablespoons chopped fresh basil
2 tablespoons extra-virgin olive oil, divided
8 1/2-inch slices eggplant (about 1 small)
1/2 teaspoon garlic salt
8 slices whole-grain country bread
8 thin slices fresh mozzarella cheese
1/3 cup sliced jarred roasted red peppers
4 thin slices red onion
What’s Next:
Preheat grill to medium-high.
Combine mayonnaise and basil in a small bowl. Using 1 tablespoon oil, lightly brush both sides of eggplant and sprinkle each slice with garlic salt. With the remaining 1 tablespoon oil, brush one side of each slice of bread.
Grill the eggplant for 6 minutes, turn with a spatula, top with cheese, and continue grilling until the cheese is melted and the eggplant is tender, about 4 minutes more. Toast the bread on the grill, 1 to 2 minutes per side.
To assemble sandwiches: Spread basil mayonnaise on four slices of bread. Top with the cheesy eggplant, red peppers, onion and the remaining slices of bread. Cut in half and serve warm.

Spending Time with Your Family
Spending time with family is important. We often get so wrapped up in the importance of money or other things in life that we sometimes forget about the most important little things. How many times can we as adults remember when our parents or perhaps relatives were too busy to spend time with us? We always remember those times during our childhood. Perhaps it made you sad from time to time. What can we do about it? Nothing except for to not make the same mistake within our own family.
It is more important than we realize to spend time with our family to bring them closer together while it is also spending quality time together. Spending time with your family over the year is something you can't replace cause time goes by quickly. Time goes by more quickly than we realize at times. It seems like yesterday an individual was a child now years later they are an adult.
We often take things for granted. Please don't take spending time with your family for granted cause its one of those things that you don't realize those happy memories you missed out on until later on in life. We often look back and wish that we could of spent more time with our immediate family or other family members, but we didn't cause of whichever reason it was at the time. It is one of those things that you can never really make up for due to time. I think its affects children when they grow up more than the parents. Children notice it when their parents don't spend time with them or they are simply too busy due to work. They might not say much due to not wanting to cause problems if they notice you are stressed out due to work or some other issue. Some Parents sometimes think it doesn't bug children when you don't spend time with them.
The more family time you spend together you will notice a reduce in stress in the household and less arguments among each other. Sure, you may say that you don't spend enough time with family because of being constantly busy due to working to earn money. Perhaps both parents work outside the home. Money doesn't always make people happy. Sometimes you need to ask yourself would you rather have less stress in your household and have less arguments or constantly be busy working with more stress all around you. It is a personal choice. You decide.

Ukraine
Our son, Trevor, arrived in Ukraine on a two week mission trip yesterday (Sunday, July 10). Go Trevor, Impact the World for Christ!!!!
Our Children
Our Children are not our children
And the time spent with them is simply borrowed
These are Gods children
Sent by him for us to feel important
They are a part of us
But more so they are a part of God
They are tomorrow's future
And what we teach them in the time we have
Can only prepare them
For there time to shine
Your children are not your children
They are simply borrowed
Our time on earth with them
Is meant to teach them
Everything we know
It is our duty to love and nurture them
And though our time together is undetermined
We all go back home to God
To explain to him what we have learned
We can only hope we have done our job

Independence Day Prayers

On this Independence Day I am reminded of all those who have sacrificed for my freedom, following the example of your Son, Jesus Christ. Let me not take my freedom, both physical and spiritual, for granted. May I always remember that my freedom was purchases with a very high price. My freedom cost others their very lives.
Lord, today, bless those who have served and continue to give their lives for my freedom. With favor and bounty meet their needs and watch over their families.
Help me to live my life in a way that glorifies you, Lord. Give me the strength to be a blessing in someone else's life today, and grant me the opportunity to lead others into the freedom that can be found in knowing Christ.
